Approach
Organic
Domaine Philippe Cordonnier vineyards are farmed according to the organic principles, but without certificate.
The vinification process lasts for 3 weeks. Initially the grapes are destemmed, then given a short cold maceration and left for post fermenting. In his approach, Philippe Cordonnier prefers punching down to pumping over, but he has cut back on punching down like many other winemakers.
The wines are matured in young barrels, which are not older than 6 years. The new wood quantity does not exceed 20 percent.
