Casale dello Sparviero is a young winery located in Castellina in Chianti, Siena, Tuscany. The vineyards cover 90 hectares, divided between the Chianti Classico and Toscana production zones. Farming has been certified organic since 2022. The Andrighetti family owns and manages the estate. Franco and Matteo Bernabei are the winemakers. Casale dello Sparviero's wine production reaches 250,000 bottles a year. The top wines are Casale dello Sparviero Chianti Classico Gran Selezione Paronza and Casale dello Sparviero Chianti Classico Riserva. The Casale dello Sparviero Chianti Classico Gran Selezione Paronza 2016 scored 91, and the Casale dello Sparviero Chianti Classico Riserva 2016 scored 90 by the Wine Advocate. Robert Parker’s tasting notes on the Casale dello Sparviero Chianti Classico Gran Selezione Paronza 2016: “The 2016 Chianti Classico Gran Selezione Vigna Paronza is a wine of large and sweeping scope to be considered with a grilled, marinated steak. It offers an array of ripe aromas with cherry and raspberry confit, backed by some savoury notes of rosemary essence, baking spice and iron ore. It sports a natural heaviness or richness that comes from both the fruit and the oak-ageing.” Gambero Rosso comments on the wines of the estate: “Intense fruitiness and finishing spiciness in the aromas of the Chianti Classico Gran Selezione Vigna Paronza 2015, with a juicy, full and articulated gustatory development with oak in support. The progression of the Chianti Classico Riserva 2015 is more streamlined, with aromas of red fruits and smoky hints.”
History
Casale dello Sparviero is a family winery owned and managed by the Andrighettis. Ada Andrighetti and her son Arrigo Barion are heading over. Franco and Matteo Bernabei are the winemakers. The estate at Campoperi, which was surrounded by vineyards, olive groves, woodlands, and arable land, was purchased by Ada Andringhetti's father, Olindo Andringhetti, a Venetian businessman. He totally rebuilt the farm and turned it into a winemaking estate in 1972. Ada Andrighetti took over in 1994, and her first vintage was released in 1997. Casale dello Sparviero, the oldest building, was originally constructed as a guard tower in the IX century. It underwent renovations until the XVII century, when it was transformed into a monastery and later into a farmhouse. The estate is named after “sparviero”, the Italian word for sparrowhawk. Casale dello Sparviero is also a wine resort offering hospitality services.
Approach
Casale dello Sparviero’s farming has been converted to organic since 2016 and obtained organic certification in 2022. Sangiovese is spread over about 90 percent of the vineyard area; Merlot, Cabernet Sauvignon, Vermentino, Malvasia, Trebbiano and Canaiolo are also presented. Planting density varies from 3,500 to 4,500 vines per hectare. Spurred cordon is applied as a vine training system. Harvesting is carried out by hand. The soils are clayey. The best red wine, Casale dello Sparviero Chianti Classico Gran Selezione Paronza, is fermented for 15 days on the skins in cement containers at a controlled temperature. It is followed by 5 days of post-fermentation maceration. The wine is aged for 18 months in French oak barriques, 6 months in Slavonian oak barrels, and 1 year in the bottle.
